Delicous Kurdish bread: Nanê Heft Tewkê

“Nanê Heft Tewkê” is one of the different types of Kurdish bread. Nanê Heft Tewkê can be translated into English as “Seven layers bread”. Ferida Reşit living in Qamishlo told us how this bread is healthy and how she bakes it.

Qamishlo – There are many types of bread enjoyed over the world. Middle Eastern countries also have many types of bread. “Nanê Heft Tewkê” is one of the different types of Kurdish bread consumed in NE Syria and Iran for years. Nanê Heft Tewkê can be translated into English as “Seven layers bread”. The ingredients of this bread are flour, water, oil, salt, and sometimes sugar.

Local bread is healthier

64-year-old Ferida Raşit lives in the city of Qamishlo of NE Syria. She told us how she makes Nanê Heft Tewkê. Stating that fast food is harmful to human health, Ferida Raşit said homemade bread is more delicious.

How to make Nanê Heft Tewkê

“Heft Tewkê is old local bread. We make Heft Tewkê as far as I remember. First of all, flour is prepared according to the number of members of our family. Then, we add water and salt in flour and knead the dough. We let it rest for a while. And then, we put each layer on top of each other. We bake the bread on a sac (a kind of metal lid). We consume Heft Tewkê mostly during Ramadan,” Ferida Raşit said.

Ferida Raşit told us they consume Nanê Heft Tewkê with honey and grape molasses, “Nanê Heft Tewkê makes you stronger. When someone serves you Nanê Heft Tewkê, it means you are a precious guest.”
